Fruit Wheat Cakes…


So these recipes came as a complete experiment, Shane LOVES shredded wheat and I am just not a fan, however I decided to give the fruit filled ones a try one day with yogurt and did them like you would over night oats and oh my goodness, they were delicious, they were like little gooey cake pieces in my breakfast and I instantly fell in love.

I then had the idea to turn them into a cake. Thought I had an amazing idea so in the blender they went to blitz down and the filling wouldn’t blend. Oh noes I thought, this just isn’t going to work. But not wanting to give up on the recipe I carried on as I do with recipes because that’s how we learn from our mistakes and adapt the recipes to work. Added all the remaining ingredients, popped it in the oven to bake and then hesitantly stuck my spoon in to take a mouthful… which then turned into another mouthful, and another until it was all gone. SUCCESS! It was blooming lovely. The fruit that hadn’t blended made this ideal as it kept little fruity pieces throughout the cake and it was delicious.

So we now have cherry, apricot, raisin, strawberry milkshake and blueberry flavoured wheats in the cupboard and I have done a few different recipes for each. And I have lots more ideas up my sleeve. I want to get my hands on the raisin filled ones but we don’t go to Morrisons or Asda often so it may be a while until we do.
